What Is a Truffle, and Why Does It Grow Underground?

When people first hear the word truffle, they often think of rarity, high prices, or fine dining. But the best way to understand this ingredient is not to begin with its price.

What Is a Truffle, and Why Does It Grow Underground?

It is to begin with a simpler question:

What exactly is a truffle?

Truffles are the fruiting bodies of certain fungi that develop underground. Unlike the mushrooms we usually see above the soil, mature truffles remain hidden beneath the surface, which is why they cannot normally be found by sight alone.

Truffles Are Not Tree Roots

Truffles live in close association with the roots of particular trees, including oak, hazelnut, hornbeam, poplar, and linden.

This relationship is known as mycorrhizal symbiosis.

The tree provides the fungus with some of the nutrients produced through photosynthesis, while the fungal network can help the plant access water and minerals in the soil.

A productive truffle environment is therefore much more than a place where truffles happen to be buried underground.

It is an ecosystem shaped by trees, soil, moisture, climate, microorganisms, and years of biological interaction.

Even the presence of suitable trees does not guarantee a stable truffle harvest. Soil composition, rainfall, temperature, and other environmental conditions all influence whether truffles can develop successfully.

Why Do Truffles Grow Underground?

Many mushrooms release spores from fruiting bodies above ground, where wind can help disperse them.

Truffles mature underground and therefore follow a different strategy.

As they ripen, they develop distinctive aromas that can attract animals. When animals locate and consume them, their movement can help disperse the spores into new areas.

For humans, this underground life cycle has also created an entirely distinctive hunting tradition.

Why Are Dogs Used to Find Truffles?

Because truffles are usually hidden beneath the soil, visual observation alone is rarely enough to locate a mature specimen.

Experienced truffle hunters learn to read the landscape, vegetation, trees, soil conditions, and areas where truffles are likely to occur.

They then work with specially trained dogs capable of detecting the aroma released by mature truffles.

Once a truffle is located, it must be extracted carefully in order to limit unnecessary damage to the surrounding soil and root environment.

Truffle hunting is therefore not simply a matter of walking into a forest with a dog.

It is a practice built around ecological knowledge, experience, collaboration between human and animal, and local traditions passed from one generation to another.

In 2021, UNESCO added the traditional knowledge and practices associated with truffle hunting and extraction in Italy to the Representative List of the Intangible Cultural Heritage of Humanity.

The recognition concerns not a particular truffle product, but the cultural system surrounding the search, identification, extraction, and transmission of this knowledge.

From an Underground Fungus to a Culinary Ingredient

Once the ecology of truffles is understood, another point becomes much clearer:

Truffle is not a single, uniform flavour.

Different species, territories, seasons, and stages of maturity can produce noticeably different aromatic profiles and culinary possibilities.

In this sense, truffles have something in common with wine or extra virgin olive oil.

The most interesting question is not simply whether something is “truffle.”

It is:

Which truffle? From where? At what stage of maturity? And for what purpose?

LuxurEat(露意膳) Perspective

For LuxurEat(露意膳), introducing truffle products should begin with helping consumers understand the ingredient itself rather than relying only on ideas such as rarity or luxury.

Once consumers understand that truffles are underground fungi closely connected with forests, trees, seasonality, and local ecosystems, information such as truffle species, origin, percentage, and processing method becomes much more meaningful.

For this reason, knowledge is not separate from the product story at LuxurEat(露意膳).

It is one of the foundations that allows the product to be understood.
