How to Keep Your Caviar at Its Best After Opening
Opened your caviar but can’t finish it? Here’s how to keep it at its best.

Caviar is exceptionally delicate. Once opened, exposure to air and changes in temperature can quickly affect its flavour, texture and freshness.
A few simple rules will help preserve its quality:
Keep it very cold
Store caviar in the coldest part of your refrigerator, ideally between -2°C and +2°C. Never freeze it.

Use the right spoon
Choose a mother-of-pearl, horn, glass or suitable non-metallic spoon to enjoy the caviar without interfering with its delicate flavour.

Limit contact with air
After serving, gently place a piece of food-safe cling film directly over the surface of the remaining caviar, removing as much trapped air as possible. Then close the tin securely and return it immediately to the refrigerator.

Enjoy it quickly
Once opened, caviar is best consumed as soon as possible and generally within 2–3 days, provided it has been continuously and correctly refrigerated.
The golden rule
Cold temperature, minimal air exposure and careful handling.
Because great caviar deserves to taste exactly as it should — until the very last spoonful.
